Great Mexican Lasagna Recipe

Like what seems like everyone else these days, I am trying to eat healthier but it has been a struggle to find recipes that don't taste like diet food (read: crap) or don't' have such small portions that I am hungry 30 minutes later. One of the cookbooks that I have found that has some good recipes in it is by Dee McCaffrey called Dee's Might Cookbook. The cookbook focuses on eating healthy without all of the processed food that is in most recipes. For the most part, the recipes have ingredients that you would find at a normal grocery store. However, there are a couple of ingredients in some of the recipes like coconut oil that I have to get at a farmer's type market like Sprouts but you don't have to get it very often and the cost is offset by not having to purchase as much processed food.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped coarsely
  • 1 pound ground turkey or ground beef
  • 1 teaspoon garlic salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder or to taste
  • Dash cayenne pepper (optional)
  • 1 cup whole kernel corn (frozen or canned)
  • One 16-ounce can pinto beans, drained
  • One 16-ounce can dark red kidney beans, drained
  • One 6-ounce can tomato sauce
  • One 8-ounce can diced tomatoes
  • One can (4 ounce) chopped green chilies
  • Six taco size corn tortillas
  • 1 cup cottage cheese
  • ½ cup to 1 cup cheddar cheese

 

Preheat oven to 350 degrees. In a large skillet, heat the olive oil over medium heat and sauté the onion, bell pepper and garlic until softened, about 5 minutes. Add in the ground turkey or ground beef. Stir in the spices and cook until meat is done. Remove from the heat. Mix in the green chilies, corn, beans, tomatoes and tomato sauce. Spray a 2-quart casserole dish with non-stick cooking spray.

 

Line bottom of 2-quart casserole dish with tortillas. Spoon in half the meat mixture and spread ½ cup cottage cheese on top. Sprinkle on half the cheddar. Repeat layers using up all the ingredients.

Bake covered at 350 degrees for 30-35 minutes. Let sit 5 minutes before serving.
